Healthy Nachos

After watching the latest episode of Jamie Oliver’s “Food Revolution”, my wife made a great point about Jamie’s strategy of taking foods we all like and making them healthier.

In the show, Jamie served nachos to school children. He mentioned that although you wouldn’t think this is a healthy meal choice, you can make it so by cooking it from scratch and adding whole, natural, and fresh ingredients.

Let’s take a look at your standard nachos. It’s pretty easy to make. Take some ground beef and fry it and add some seasoning. Take some nacho chips, place them on a cooking sheet, cover with the fried beef, pour some processed cheese over top, put in the oven for a few minutes, and you got your nachos. Dress up with a little sour cream, jalapeno, and salsa. This version has quite a bit of saturated fat and other than the salsa and jalapeno, not much good for you.

Now let’s take a look a healthier choice. First, start with some ground turkey (free range if you can find it). Brown it in a pan and mix in the taco seasoning. When the meat is almost cooked through, add some diced onions, bell peppers, cooked black beans, and any other vegetable of your choice. Take this whole mixture and put it over some baked nacho chips. Instead of processed cheese out of a jar or can, use fresh shredded cheese. After baking for a few minutes, finish it with some sour cream, jalapeno, and some freshly made salsa (onions, cilantro, tomatoes, peppers). This version is lower fat and has a variety of vegetables providing more fiber and nutrients to this snack.
